Butternut Pumpkin and Cheese Fritters
Ingredients
- 2 cups grated butternut pumpkin
- 1/4 cup finely diced red onion
- 1 cup finely grated cheese
- 1/2 cup flour plain or wholemeal
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp dried Rosemary
Instructions

Grate Pumpkin and cheese. Add to a mixing bowl.

Finely dice onion and add into the bowl.

Add egg to grated ingredients.

Add the dry ingredients and mix.

Place tablespoon sizes of mixture into a well oiled preheated non stick pan, on a medium setting. Cook for about 3 minutes aside.
Or place tablespoon size amounts of mixture into a preheated and oil sprayed waffle iron. Cook for about 5 minutes.

If adding into the lunch box then place on a cooling rack and allow to cool completely before popping them in the box.

They taste great with chutney, sauce or sour cream for dipping!!
