Butternut pumpkin and cheese Fritters

Butternut Pumpkin and Cheese Fritters

Ingredients

  • 2 cups grated butternut pumpkin
  • 1/4 cup finely diced red onion
  • 1 cup finely grated cheese
  • 1/2 cup flour plain or wholemeal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp dried Rosemary

Instructions

  1. Grate Pumpkin and cheese. Add to a mixing bowl.

  2. Finely dice onion and add into the bowl.

  3. Add egg to grated ingredients. 

  4. Add the dry ingredients and mix. 

  5. Place tablespoon sizes of mixture into a well oiled preheated non stick pan, on a medium setting. Cook for about 3 minutes aside. 

    Or place tablespoon size amounts of mixture into a preheated and oil sprayed waffle iron. Cook for about 5 minutes. 

  6. If adding into the lunch box then place on a cooling rack and allow to cool completely before popping them in the box. 

  7. They taste great with chutney, sauce or sour cream for dipping!!
