2 Ingredient popcorn balls

Two ingredients, yes just the two! Well it could be three if you add the drizzle of chocolate (Which is totally delish) but three ingredients is still pretty awesome right? I have a popcorn bar on my website that I had started to make but had remembered seeing popcorn balls on Pinterest once and felt a little inspired. They where made using melted marshmallows and a few other ingredients that I didn’t have but I did have honey and Popcorn!!

2 ingredient popcorn balls

Ingredients

  • 1/4 cup honey
  • 3 cups popped popcorn
  • 3 tbsp melted chocolate - optional but recommended

Instructions

  1. Make your popcorn - In a pot over a high heat, heat a tbsp oil and add your popcorn kernels. Put a lid on and you'll soon have popcorn. Or you can pop it in a brown paper bag in the microwave or buy it pre popped. Use a popcorn machine.....  The popcorn step is totally up to you!  

  2. Heat honey in a pot over a medium to high heat. Bring to a rolling bubble, stirring every 30 seconds for about 4-5 minutes. Pour over top of the popcorn and mix thoroughly with a wooden spoon to spread the honey all over the popcorn.  

  3. Give the popcorn mix a few minutes to cool or you'll badly burn yourself!! About 3-5 minutes. Using slightly damp (not soaking) hands grab a handful of mix and squash and roll into balls. Set on a tray with baking paper. Melt chocolate and drizzle over top of the formed balls. Allow to set in the fridge for about 15 minutes. If you choose not to do the chocolate then you can leave them out of the fridge and let them set on the bench for 10 minutes. 

  4. Store in an airtight container in the cupboard in cooler weather but if its super hot I suggest keeping them in the fridge. 

Recipe Notes

I dont recommend these for pre-school age kids due too popcorn being a chocking hazard in children under 4.
